We all love simple dinners! Especially on the nights where you’ve been running around all day and you just want something super simple and quick to eat for dinner. Many times our minds go to “let’s order takeout” but then you don’t want to go get take out or wait for it to be delivered… that’s where this easy chicken lo mein recipe comes in!

How to Make Chicken Lo Mein

What You’ll Need:

1 pound chicken breast, sliced thin
2 tablespoons peanut oil (or canola oil)
1 red bell pepper, seeded and sliced
1 small onion, sliced
½ cup sliced cabbage
1 cup julienned carrots
¼ teaspoon ground ginger
½ teaspoon garlic powder
¾ cup water or chicken broth
¼ cup soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
8 ounces spaghetti noodles, cooked according to package directions

Instructions:

  1. Heat a large (12 inch) skillet or wok over medium-high heat. Add 1 tablespoon of oil and the chicken breast to the skillet. Brown the chicken breast on both sides until cooked through. Remove the chicken and keep it warm.
  2. Add the remaining oil to the skillet with the bell pepper and onion. Cook for 2 to 3 minutes before adding the carrots and cabbage.
  3. In a jar or bowl, whisk together the ingredients for the sauce: ginger, garlic, water or chicken broth, soy sauce, oyster sauce, and sesame oil. Pour the sauce over the vegetables and toss to coat.
  4. Return the chicken to the skillet and add the cooked spaghetti noodles. Toss to coat in the sauce.

Can I Use Spaghetti Noodles for Chow Mein? 

If you’re unable to find chow mein noodles, a great substitution would be thin spaghetti noodles.

How Do I Store Chicken Lo Mein?

You can store leftover Chicken Lo Mein in an airtight container in the refrigerator for 3-4 days. To freeze, store in heavy-duty freezer bags for about 2-3 months.

How Do I Reheat Chicken Lo Mein?

To reheat your leftover Chicken Lo Mein you can either microwave it or warm it up in a pan on the stove. Add a small splash of water to help loosen up the cold noodles. Feel free to add in some extra Lo Mein sauce!
